HAPPY NOVEMBER! Whaaaat. Don’t know how we got here. But I currently have three… yes three beverages sitting in front of me right now. It’s just one of those mornings.
One for hydration: warm water with lemon, ginger and shilajit
One for energy: superhero latte (coffee with egg yolks, raw milk, maple syrup & vanilla)
One for fun: peppermint tea
Also eating cake for breakfast…. recipe below.
We are celebrating today! Because three years ago I started Glow with Ella, as a place to share my health journey with you all, which feels like a lifetime ago because I feel like I have been doing this forever. Who would’ve thought that one girl's health problems would turn into this beautiful incredible community of people, all looking to feel their best and live their best lives.
I am SO GRATEFUL FOR EACH AND EVERY ONE OF YOU!
Health and healing is no where near linear. You do not just wake up one day symptom free, it ebbs and flows depending on your seasons of life! But I started this page to be a center of balance within it all, to help cut out the noise.
When I first dove into this world it made my health almost worse…because I was so overwhelmed with all of the conflicting information being thrown out there. So much fear mongering that led to even more stress and obsession.
However… health is no longer health when you are stressed + obsessed over it. I have learned over the years that no matter what you are doing, there will be someone to oppose it and say it is wrong. The key is to stop comparing and stop outsourcing. Instead, start looking inward and listening to your own body. Do what feels good for YOU.
We are all different. If you follow someones blueprint to a T, you will not feel nor look like them. Each of us has our own unique blueprint that makes us feel good, based on many different factors.
My hope is to be the inspiration that leads you to find your unique blueprint that makes you feel like the best version of yourself. This can change over time depending on the different seasons of life you are in! I am pivoting, changing, and growing every single day.
Health is more than just food, nutrition and working out. It is joy, stresslessness, community, passion and love. Sometimes it’s margaritas chips and guac laughing at a table with your friends. Sometimes it’s 10 interrupted hours of sleep and a lazy couch day. Sometimes it’s putting your feet in the sand and closing your eyes and listening to the ocean. Health comes in all shapes and sizes, and the most important thing you can do to find what you need to live your best life is to tune into your intuition, and listen to your Gut Feelings.
HOW IT STARTED
I am so grateful to be where I am today. + excited to see where I will be in three more years from now. I am even more grateful to be doing it alongside you. YOU inspire me every day. YOU make me excited to wake up in the mornings. Thank you :)
STRAWBERRY & BUTTERCREAM CAKE
A celebration calls for a delicious cake… and what is a better combination than strawberries & cream. The perfect mix of soft sweetness and juicy tartness.
Cake Ingredients
2.5 cups eikhorn flour
2.5 tsp baking powder
¼ tsp salt
4 eggs
1 cup maple syrup
2/3 cup milk
½ cup butter
3 tbsp olive oil
2 tbsp vanilla
Strawberry Buttercream Frosting
2 sticks butter
2 tsp vanilla bean paste
2 tbsp arrowroot flour
¼ cup maple syrup
1 cup freeze dried strawberries
Recipe
1. Preheat oven to 350 degrees
2. Combine dry cake ingredients: whisk together flour, baking powder and salt and set aside
3. In a separate bowl, using a stand or hand whisk mixer, beat together eggs for around one minute until aerated
4. Slowly pour in maple syrup and beat until it is fluffy, tripled in size and an off white color (~10 minutes total)
5. In a pan, melt butter on low heat, and add in milk and whisk until combined, don’t let this get too hot (no bubbles)! Make sure it is a cool temperature
6. Once cooled, add in milk and butter mixture to the egg mixture and mix together
7. Beat in vanilla and olive oil
8. Finally, gently fold in flour mixture (don’t overmix!) until thoroughly combined, make sure there are no pockets of flour
9. Butter two 8 inch cake pans and add in batter (make sure to tap on counter to get rid of any bubbles)
10. Bake for around 30 minutes or until golden brown and a toothpick comes out clean in the middle
11. While cake cools, lets make the frostingggg
12. For frosting, beat together softened butter, vanilla bean paste, arrowroot flour and maple syrup
13. Blend together freeze dried strawberries until powdered, and add into frosting mixture and beat together until a thick pink frosting forms
14. Once cakes are cooled, get to frosting and garnish with some strawberries! YUM!
