Happy spring solstice everyone! SPRING HAS SPRUNG! Drinking an iced lemon matcha.…recipe is below <3
Longer & warmer days, flowers beginning to bloom & energy begins to increase. If you feel like you were struggling to reach your goals in January, that is because we are not wired to completely change in the middle of winter. Winter is for more rest, nature is in hibernation.
Spring is where our energy starts to increase and we become more inspired and motivated. This is the better time for goal setting and renewal. Some of my favorite Spring activities:
De-Clutter + Organize… Spring Cleaning
Open up windows & doors to let in fresh air
Getting outdoors and more nature walks + hiking
Sunlight in the AM
Watching sunsets
Setting new goals
Dry brushing + lymphatic drainage
Spending time in the sun
Gardening
Reading
Spending time with friends and family
Bringing more plants + flowers into my living space
Starting new projects & completing unfinished ones
Going to the farmers market & eating seasonally
Spring is also for letting go of things. Decluttering not only in your space but also in your emotional state and mind. Letting go of things that don’t serve you anymore (physically & emotionally).
One of my favorite practices for this is to make a list of what gave me energy so far this year and things that have drained my energy. This helps me mentally sort out what I should be doing more of & vis versa.
Spring also has me craving fresher lighter foods… here are some of my favs this week
Spring Food & Recipes
Iced Honey Matcha with Lemon
As much as I love love love a matcha latte…sometimes I need something more refreshing and light & this is the perfect midday pick me up for those times.
Ingredients
1 tsp matcha (my favs are pique & cymbiotika)
1 tbsp honey
filtered water
1 lemon
Recipe
Blend together water, honey, matcha & lemon juice
Pour over ice & enjoy!
Green Pea Dip
The yummiest fresh dip to dip seasonal veggies in or add on top of a bowl or to a snack plate.
Ingredients
1/2 cup green peas
1/2 cup edamame
1 green onion or handful of chives
1/2 lemon squeeze
1/2 lemon zest
1/2 avocado
1/4 cup parsley
3 tbsp olive oil
1/3 cup cottage cheese
Recipe
I used frozen green peas and edamame so I started with thawing them over heat with the lemon and lemon zest and one tbsp of the olive oil
Add everything else to a food processor
Once peas are unthawed add everything to food processor
Blend Together
Easy as that
Adultified Snack Plate
Always…. When spring comes around this is what calls me. Just a buncha my fav things on a snack board.
What I like on it:
Dips (see my fav above OR a whipped ricotta with lemon…etc..)
Seasonal veggies: radishes, carrots, cucumber, chicory
Sourdough crackers or sourdough bread
Pickled veggies: carrots, onions, saurkraut, olives
Tinned Fish (my new obsession), Smoked Salmon or Sliced turkey
Raw cheeses
Garnish: drizzle of olive oil, flakey salt n pepper, chili flakes, lemon squeeze
Ugh its so good. I am craving now. Build your own whatever you want it just always turns out so yummy!!!
