In no surprise, one of my favorite activities to do while traveling is eating.
Eating to me is more than just fueling my body — it is nourishment in the form of culture, love, memories, it is an experience. And I feel that when I go to a new place, I am able to connect with people through their food.
The most recent place I visited was Vermont, and all of the food there was fabulous. Tons of incredible local produce, all the dairy of course (SO GOOD), and lots and lots of maple products. I felt like every single restaurant I went to prioritized sourcing from local farmers, and that felt really special.
On my last morning there, I really wanted to stop by this coffee shop I had found online and get some lattes and breakfast. We ended up ordering a ton of pastries because all of them looked so good, and one of them was this sour cream walnut coffee cake that was amazing. It was fluffy & moist, not dense or too sweet. I am not a huge fan of overly sweet pastries or even cakes, but this was amazing. As soon as I took the first bite I turned to Cooper and said, I have to remake this, so here we are.
The perfect excuse to have cake for breakfast. This is fluffy and moist and melt in your mouth. I highly recommend dipping it into your frothy morning latte. Enjoy <3
