I spent the last week in Hawaii with my mom and our boyfriends, and we took up cooking for them one of the nights. We also bartended, so the cooking was a bit slower and took a bit longer than it should’ve, but once served we got the feedback that It was very worth the wait.
If you can’t tell…I am really trying to take advantage of every last second of summer before this Saturday (autumn solstice), and this dish is just perfect. It is light and fresh but also warming and nourishing. It is also just so fun to make, and no waste.

Pineapple Boats w/ Ginger Beef, Pineapple Salsa & Coconut Rice


*Makes 4 Boats*
Ingredients
For the Coconut Ginger Rice:
2 cups jasmine rice
1 can (14 oz) coconut milk
1 cup water
1 tbsp fresh ginger
1 tbsp coconut oil
1 tsp salt
