I woke up craving an olive oil cake. So I did what any other normal person would do, I baked one. I have a new found love for a lot of different foods and flavors this Summer season that I haven’t in the past. One being zesty citrus fruits and olive oil. Even better when paired with a little vanilla. Cream soda was my FAVORITE soda growing up, and when you add in a little bit of orange juice it makes an incredible orange creamsicle bev (you gotta try it - so nostalgic). I wanted to somehow incorporate the orange and vanilla creamsicle flavor into the olive oil cake without taking too much away from its original taste, flavor and texture.
& I perfected it.
But before we dive into the olive oil cake… I want to share a few more of my favorite orange creamsicle recipes with you to enjoy while the sun is still shining.
Orange Creamsicle Adrenal Tonic
Your adrenals are glands within the endocrine system that produce hormones to help regulate multiple systems in the body including your response to stress, metabolism, immunity and more. One of the most known hormones that the adrenals release is cortisol. There was a popular buzzword for a while called “adrenal fatigue” which was said to occur when you are exposed to chronic stress. Symptoms were fatigue, weight problems, digestive issues, sluggishness. There is no evidence that adrenal fatigue actually exists (the science behind the theory doesn’t add up), but whether or not it does, chronic stress is known to be the number one cause of most negative symptoms in the body.
The most important things that you can do for chronic stress in your body is getting good quality sleep, deep belly breathing, journaling and meditation, spending time in nature/grounding, getting sunlight in your eyes first thing in the morning and before it sets.
This “adrenal tonic” will not fix your adrenal system. It will not heal you - what will is going back to the basics. But this beverage is quite delicious and contains ingredients that will make you feel great. The reason it is called an “adrenal tonic” is because it contains nutrients that replenish your minerals + electrolytes to help nourish your body and give it the resources to function properly. But it literally just tastes like a delicious nostalgic orange creamsicle popsicle that was blended into a beverage. Say less.
Ingredients:
2 Oranges (juiced)
2 tbsp raw cream or coconut cream
1 tsp vanilla
1 scoop collagen
1 packet or minerals or pinch mineral salt
1 cup coconut water
Optional: splash of ginger juice
Recipe:
Blend together all ingredients (leave out coconut water)
Pour over blended mixture with coconut water and ice
Mix together + enjoy!
Shaved Ice Orange Creamsicle Bowl
You have probably seen this trend all over the internet. I would love to meet the person who peeled an orange, stuck it in the freezer and decided to try grating it - I mean honestly genius. I of course had to try it for myself, and it is definitely worth the hype. Especially when the sun is shining, it's the perfect breakfast or snack on a hot day. I will warn you though your hands may go numb by trying to shave this frozen fruit - wear gloves if you have them.
Ingredients:
1 orange (frozen) - I have also added mango too and it is so delish!
½ cup greek yogurt
1 tsp vanilla bean paste
1 tbsp raw honey
1 tsp olive oil
Lil squeeze of lemon
Orange zest (of ¼ orange)
Crushed pistachios
Bee Pollen
Recipe:
Add Greek Yogurt to a bowl
Grate orange into bowl (this is where the numb hands may come in)
Mix together honey, olive oil, vanilla bean and lemon & drizzle onto bowl
Top with bee pollen, crushed pistachios and orange zest
Enjoy perfection!!
Orange Creamsicle Upside-Down Olive Oil Cake*
The problem with living by myself as a girl who loves to make extra large portions and bake whenever I think of an idea is that I don’t have friends to share it with when it is fresh out of the oven. As soon as it is ready to be eaten, I cut myself a beautiful one serving slice. But once I eat that slice, I just stand over my counter picking at the rest of it until it is about halfway eaten. It is one of my fatal flaws. It is that good though. & the thing about this olive oil cake is it’s not too heavy. You feel good after eating it. It is light, it is zesty yet creamy and it is the perfect summer cake.
