I was literally so excited when I found chocolate mint at the farmers market OH MY GOSH. I discovered it last year, it’s just a different variety of mint (I believe a mix between spearmint & peppermint) that has a rich chocolate scent. I couldn’t believe it when I first smelled & tasted it. Literally is like mint chocolate ice cream. It is just sooo fresh and creamy.
So, naturally, my favorite way to use it is to make mint chocolate chip (for me, chunk) ice cream. This is how I used the chocolate mint last year and it was just so good I didn’t want to reinvent the wheel. Once you use fresh mint vs extract or even flavoring in ice cream it is just life changing. It tastes how it’s supposed to—light, creamy, balanced and not overpowering. Fresh. It is so perfect with the vanilla & the chunks of chocolate. I think this just has to be my favorite ice cream flavor of all time.
It tastes even better right now because it’s literally 90 degrees out. Eating this for breakfast lunch & dinner. Let’s get intoooo it….
Mint Chocolate Chunk Ice Cream
Ingredients
2 + 1/2 cups heavy cream
1 + 1/4 cups whole milk
1 cup mint leaves (not packed—I used the chocolate mint variety)
1/2 cup maple sugar
2 tsp vanilla powder (or vanilla bean paste/extract)
Dark chocolate chunks (measure with your heart, I did about 3oz)
Pinch of salt
Optional: 2 droppers of chlorophyll for color
Recipe
Finely chop mint leaves and add to a bowl with sugar
Rub together mint and sugar between your fingers for 2-3 minutes to release oils until moist, for maximum flavor
In a large bowl, add in mint/sugar mixture and pour over milk, use a blender or immersion blender to blend until smooth (option to strain here to make it extra smooth, I like keeping it as is for the texture & flavor)
Add in heavy cream, vanilla, chlorophyll, and salt and stir together
Make sure base is chilled, if it is not chill in the fridge for an hour
Add base into an ice cream maker to churn
Churn for 20-30 minutes or until reached thick ice cream consistency
While churning, chop up chocolate chunks
Once you you a couple minutes from reaching desired consistency, add in chocolate chunks to mix in

so i made this by chance the other day (before your post) and i was going to just throw in chocolate chunks but instead i melted them with a little coconut oil (like 1 tsp for 4ish ozs) and drizzled it into ice cream while churning right at the end… and it’s amazing!!! they are crunchy but also melty and you should try it and see whatcha think!
