Raspberry Chocolate Banana Bread, Strawberry Shortcake Cookies, Cherry Garcia Ice Cream & More...
As soon as January ended I had the urge to make everything that I made pink…and heart shaped. Like today I ate cottage cheese (attempted to make them heart shaped) pink raspberry pancakes for breakfast + sipped on a strawberry matcha latte. Pink sourdough with a lot of butter and flakey sea salt for second breakfast. I need help, but I am also fully embracing it.
So now that it is the Sunday before Galentines & Valentines day (excited but also don’t want this phase to end…), I had to share my pink-heart-shape-ified full menu.
AND ALSO: today marks the day we are officially honoring ~making people food~ as a love language. I don’t know how it hasn’t been up to this point! To me the most rewarding thing is putting love into a meal for someone you love, and seeing their reaction. So no matter who you are spending the week with, your gal-friends, your boy-friends, your fam, or best of all yourself, you will put a smile on someone’s face.

Raw Cherry Garcia no-churn Ice Cream
Ingredients
16oz heavy raw cream
1 cup frozen cherries
1/3 cup chocolate chips
1 tbsp coconut oil
2 egg yolks
1 tsp vanilla extract
1 tsp vanilla bean paste
1/4 cup maple syrup
1 lemon juice
Recipe
Place a bowl in the freezer the night before
Add cherries into a pot over low heat and cover
Whisk together egg yolks and lemon juice and set aside
Once cherries are thawed, slightly mash until broken up
Remove cherries from heat, set aside in separate bowl
Add chocolate and coconut oil into same bowl over low heat and stir until melted, remove from heat and set aside
Pull out cold bowl from the freezer and add in raw cream, vanilla extract, vanilla bean paste and maple syrup
Using a handheld whisker, begin to whisk cream
Slowly add in egg yolk mixture
Whisk until thickened in consistency but not yet whipped cream
Fold in cherries
On the top sprinkle the melted chocolate mixture
Cover the bowl and place in freezer
Every hour pull out from the freezer and stir, making sure to scrape the sides
After about 5 hours you’ll have the perfect ice cream!!!
