Hi friends happy Sunday <3 My morning already feels weird because we lost an hour of sleep in the middle of the night — but I am SO excited for later sunsets.
Already have eaten majority of my meal shortcuts this morning. I hope you enjoy as much as I do —
On the Menu:
Date Caramel
Gluten-free Buckwheat Bread
Golden Turmeric Lentil Wraps
Coconut Protein Bars

Date Caramel
Ingredients
12 medjool dates
1/2 cup coconut milk or cream
2 tbsp almond butter (optional)
1 tbsp maple syrup
2 tsp vanilla
salt
Recipe
Pit dates and split in half, throw into a bowl
Heat up coconut milk over the stovetop till hot, then pour over the dates, making sure they are all submerged
Let dates soak for about 20 minutes until softened
Add dates with coconut milk to a food processor with almond butter, maple syrup vanilla and salt — pulse everything together until smooth
Enjoy!!!!!
Storing/Subs/Notes
Store in an air tight container in the fridge for a week or store in an ice cube tray in the freezer
I like eating it with apples, baking with it or blending it in bevs
