Happy Sunday, the day of reset and R&R. I’m sitting here drinking my matcha latte, and have a beautiful day of eating and couch rotting to look forward to.
I did all of my prep - meal shortcuts - to make my life a lil easier this week and a lot more delicious. I am not much of a meal prepper because I like to eat based on my cravings and not be restricted to eat only one meal so this allows me a lil more freedom while also saving me time.
On the Menu:
Perfect Chicken Breast
Chicken Apple Salad
Sweet Potato Gnocchi
Date Caramel
Mint Chocolate Chip Ice Cream
Let’s get into it…..
Perfect Chicken Breast


Ingredients
2 Chicken Breasts
1 Tbsp Butter or Oil
Salt, Pepper, Smoked Paprika
Recipe
Preheat oven to 400 Degrees F
Put oven safe pan over medium heat and allow to get hot (I prefer cast-iron)
Add salt, pepper, and smoked paprika to both sides of chicken
Once pan is hot add butter or oil and place chicken to sear, 2-3 minutes on each side
Once seared on both sides, transfer pan with chicken into the oven for about 15 minutes or until thoroughly cooked through
Let rest for 10 minutes before cutting
