Hey hey hey friends! Happy October :)
I am finally feeling that refreshing crisp to the air, while golden light is still flowing at all hours of the day. I am loving this month so much, it is truly gorgeous.
As always, utilizing some of my favorite produce this season for today’s meal shortcuts (+ there are a few no waste recipes too!!!!)

Carrot & Ginger shots
Ingredients
32 ounces carrots
2 large hands of ginger
Recipe
Clean carrots & ginger, and juice (if you do not have a juicer, blend with a little water and strain through a cheese cloth; the juice will be a bit less strong)
Save the pulp for the below two recipes!!
Notes & Storage
Seal properly and store in the fridge, juice is best within 48 hours (can freeze the remainder!) but can last up to 5 days
