Hey hey heyyyy good morning I am sipping on an iced matcha latte, nothing like that first sip in the morning. I had the intention yesterday of being productive with my time & operating from an abundance mindset: stop stressing myself out by saying “I do not have enough time.” It really was helpful in allowing me to stay focused and knock some things off the to do list.

THAT andddd the later sunsets. I am so grateful for this time change it has completely shifted my energy in the most positive way. The days already feel so much longer and they are only going to keep getting longer until summer.

One of the things I did yesterday was a lotta meal shortcuts for myself to make my life a lil easier this week. I am not much of a meal prepper…because I try to be really intuitive with the way that I eat. If I crave something, I will eat that thing. + sometimes I feel like the strict and rigid meal prep set up doesn’t work for me or allow me to be as creative.

BUTTTT on the flip side it is super nice to have stuff meal ready in the fridge when I am busy and hungry and don’t feel like taking the time and dishes to whip something up. So I like to make a couple “meal shortcuts” I call ‘em. Some meals, some components of meals.

For example, meatballs, I prep & cook and either fridge or freeze them. It is not a full meal, but when I am making dinner I don’t have to do the work of making meatballs. I can just make a bowl of pasta and then throw the already made meatballs on top, easy. Or granola…a component of breakfast that I can zhuzh (I had no idea that was how you spelled zhuzh I thought it was juj) up with yogurt, honey, blueberries…you get the gist.

I also notice that lunch is my struggle meal because when I am working in the morning & then the afternoon, the last thing I want to do midday is make a mess and clean up, so having something yummy and easy in the fridge is always nice.

So anyways, I wanted to shareeee all these meal-shortcut / meal whatever ya wanna call it recipes with ya because they are too delish not to. So let’s get intooooo ittt.

On The Menu:

  • Ginger Shots

  • Sourdough Vanilla Bean, Maple & Sea Salt Chunky Granola

  • Crispy Rainbow Potato Salad

  • Cooked Potatoes

  • Blood Orange Quinoa Salad

  • Ancestral Beef Meatballs

  • Dark Chocolate n Vanilla Bean Oranges

  • Sourdough English Muffins


Ginger Digestion Shots

I like to drink these as a shot in the morning (reaaaally wakes ya up) or add to a warm beverage with lemon & sea salt. Also splash in my drinks throughout the day.

Ingredients

  • 3 hands of ginger

  • Filtered water

Recipe

  1. Clean ginger, chop up, and add to a blender

  2. Add filtered water so it submerses the ginger

  3. Blend

  4. Use a mesh strainer (or I use a Juv, discount is glowwithella) to separate the pulp

  5. Store ginger juice for 3-4 days in the fridge!

Sourdough Vanilla Bean, Maple & Sea Salt Chunky Granola

This flavorrr is amazing the sourdough comes through so good with the simple but divine vanilla maple & sea salt. It is the perfect balance of CRUNCH & chewyness. My favorite way to eat is is in my adultified cereal bowl.
