Hellloooo beautiful people!!! Happy Sunday. I am sipping on my absolute favorite frothy matcha latte. Yet to go to the farmers market but planning on it asap.

It is meal-shortcut Sunday and I have 7 recipes to make your life a lil easier & a lot more delicious.

On the Menu:

  • Lemon Ginger Digestion Cubes (w/ two no-waste recipes)

    • Ginger Simple Syrup

    • Homemade All-Purpose Spray

  • The Perfect Overnight Oats

  • Orange Creamsicle Skin&Gut Gummies

  • Crispy Gut-Healthy Potatoes

  • Vanilla Bean & Dark Cacao Ice Cream

So let’s get intoooo itttt…

Lemon Ginger Digestion Cubes

Ingredients

  • 12 lemons

  • 2 cups roughly chopped ginger

  • 1 cup filtered water

Recipe

  1. Clean lemons and then juice lemons (& save rinds for all-purpose spray below)

  2. Clean and roughly chop ginger, add to a blender with filtered water and blend

  3. Using a cheese cloth or mesh strainer, strain pulp from ginger juice (& save pulp for ginger simple syrup)

  4. Mix ginger juice with lemon juice

  5. Add liquid to an ice cube tray, cover and freeze

  6. Once frozen, add one cube to a mug with some warm water and enjoy on an empty stomach in the morning!

Ginger Simple Syrup

Ingredients

  • Leftover ginger pulp (about 1 cup)

  • 2 cups filtered water

  • 2/3 cup maple syrup or honey

Recipe

  1. Add pulp and filtered water to a pot over medium heat

  2. Bring to a boil then reduce heat and cover for 15-20 minutes

  3. Strain out excess pulp through a mesh strainer*

  4. Add liquid back to pot with maple or honey, mix together until dissolved

  5. Turn off heat and add liquid to a jar, seal and place in the fridge! This makes the best ginger ale or ginger margaritas!

*You can use this ginger pulp again with some water to make a strong cup of ginger tea!!

Homemade All-Purpose Spray

Ingredients

  • Leftover lemon rinds

  • White or apple cider vinegar (white preferred)

Recipe

  1. Add leftover lemon rinds to a jar, push down

  2. Top with vinegar until fully submerged

  3. Seal jar tightly, and let sit for about 2 weeks

  4. After two weeks, strain out rinds and you have the perfect all purpose cleaning spray for fruits, veggies, and all purposes!
