Lemon Ginger Digestion Cubes

Ingredients
12 lemons
2 cups roughly chopped ginger
1 cup filtered water
Recipe
Clean lemons and then juice lemons (& save rinds for all-purpose spray below)
Clean and roughly chop ginger, add to a blender with filtered water and blend
Using a cheese cloth or mesh strainer, strain pulp from ginger juice (& save pulp for ginger simple syrup)
Mix ginger juice with lemon juice
Add liquid to an ice cube tray, cover and freeze
Once frozen, add one cube to a mug with some warm water and enjoy on an empty stomach in the morning!
Ginger Simple Syrup

Ingredients
Leftover ginger pulp (about 1 cup)
2 cups filtered water
2/3 cup maple syrup or honey
Recipe
Add pulp and filtered water to a pot over medium heat
Bring to a boil then reduce heat and cover for 15-20 minutes
Strain out excess pulp through a mesh strainer*
Add liquid back to pot with maple or honey, mix together until dissolved
Turn off heat and add liquid to a jar, seal and place in the fridge! This makes the best ginger ale or ginger margaritas!
*You can use this ginger pulp again with some water to make a strong cup of ginger tea!!
