Happy Sunday friends! I am currently sipping on my electrolyte elixir because it is one of those days where nothing is quenching my thirst. This is one of my top fav bevs, especially during the summer (which is NOT over btw…)
These recipes reflect that, they are a bit lighter, fresher, and perfectly nourishing.

Carrot Ginger Dressing

I also included my electrolyte elixir so you can quench your thirst today. It’s like a natures gatorade, super hydrating, perfect for a day out in the sun or even a day couch rotting to cure your hangover. Everything in between.

Electrolyte Elixir
Ingredients
1 orange
1 lemon
1 lime
1 tsp raw honey
Splash ginger juice (or 1 small nub of ginger)
Couple pinches of mineral salt
1 cup coconut water
1/2 cup filtered water
Ice
Recipe
Juice orange, lemon and lime, set aside
In a blender add ginger nub with 1/4 cup of water and blend it up, then strain out the pulp through a mesh strainer
Clean out blender and then add back in orange/lemon/lime juice, raw honey, ginger juice, mineral salt and water, blend together
Pour over ice and then top off with coconut water, cheers!


Carrot Pickled Slaw
Ingredients
2 large carrots
1 large cucumber
1 tsp freshly grated ginger
2 green onions
1/2 lemon juice
4 tbsp white or rice vinegar
Salt
Recipe
Grate carrots and cucumber into a bowl
Mince green onions and add into bowl
Grate ginger finely directly into bowl
Mix in lemon juice, vinegar and salt
Add to a jar and tightly seal, store in the fridge!
Let cool and soak for a couple hours before serving


Carrot Ginger Dressing
Doubled Recipe
Ingredients
2 carrots
2 green onions
20 chives
1.5 tbsp fresh ginger
3 tbsp coconut aminos
2 tbsp white or rice vinegar
1 clove garlic
4 tbsp olive oil
1 dash of toasted sesame oil
1 squeeze lemon
1 tsp honey
Salt and pepppper
Recipe
Roughly chop carrots
Blend everything together besides olive oil
Pulse in olive oil once everything is blended
Store in the fridge tightly sealed!
