I am not a meal prep girly. The idea of it sounds great, but I crave such different things throughout the week and like to switch it up too often to eat the same things all week (I am very grateful that I am able to work from home to do that).
But the dissshhhhes and cleaning that come with that. I actually feel like I spend twice the amount of time I do cooking and eating and cleaning all day. So I like to “meal shortcut” and make things meal ready each week to make my life a bit easier.
I switch it up each week, but here’s what I had on the menu for meal short-cutting this week:
(I just spent 30 minutes on Canva looking for a cute menu template and couldn’t find any that fit the theme but it made me want to create a restaurant menu so damn bad WHO WANTS TO OPEN ONE WITH ME - absolute dreams) Ok meal shortcutting break down: Sourdough Bread, Ginger Shots, Meatballs, Salad Dressing.
Sourdough Bread
I have kind of been spamming you with sourdough content recently… so I hope you love sourdough. I am obsessed if that isn’t already clear. Sourdough has always been my favorite bread and when I learned that it is one of the best breads for you I was incredibly happy. I’ve said it once and I will say it again: there is nothing better than a slice of sourdough toast with butter and flakey sea salt.
Sourdough is a labor of love - and if you are making your own starter can take upwards of a week (typically 11 days) but once you have an active starter, maintaining it is easy. It is a messy hobby, but worth it.
My “Sourdough for Dummies” guide will be available for paid subscribers on Wednesday the 12th (with tips, recipe and more!)
Ginger Shots
Ginger is another love of mine. I love ginger everything: carrot ginger soup, ginger fried rice, ginger pickles, ginger dressing - and straight up ginger shots.
I am sorry to tell you this but typically when you are buying ginger shots at the store… they aren’t doing much for you. Especially if they are sitting in plastic containers. Most of the juicing, packaging process was weeks prior and gone through lots of hands to end up in yours. And for $7 that is just not worth it for me.
Instead - buy a ton of ginger for $7 and make your own at home! I love starting my morning with a ginger shot or diluting it in water (or making my electrolyte elixir). It helps to kickstart my digestion, is oh so soothing and also just gives your immune system some nice support.
I have a full on juicer but I honestly rarely use it because the clean up is just blehhh it is a whole task. So I use the Juv Juicer - it makes it SO easy and everything can go straight into the dishwasher (I think glowwithella works as a discount!)
All you need:
Ginger (I like organic so I don’t have to shave the skin off)
Filtered Water
Juv Juicer
Blender
Soak + Scrub your ginger in a baking soda, salt and filtered water bath
Add ginger to a blender and pour filtered water until all pieces are submerged - Blend
Pour ginger pulpiness (idk what to call it) into Juv and strain!
Voila!
Take as a shot, cook with, whatever you like. They burn going down in the best way possible. These are best consumed asap but seal properly in a glass container and drink for up to a week! Tutorial HERE.
Meatballs
MEATBALLS. Oddly enough these were the first meat item I ever began craving after being vegan. I saw them and my mouth just watered, I knew I needed them immediately. And it has been a love story ever since.
I make mine super simple so I can add them onto anything.
Simple, yet perfect, Balls of Meat:
Ingredients:
1 LB Ground Beef (Force of Nature is my favorite! You get the benefits of the ground beef + organ meats and no you do not taste the organ meats)
¼ Cup Chopped Parsley
⅓ Cup Sourdough Bread Crumbs*
2 Egg Yolks (I prefer organic pasture raised, local if possible)
Lotsss of pepper and some salt
Optional: ¼ cup raw parm to taste
Recipe:
Preheat oven to 350
Mash everything together with your hands
Form into little balls (size is up to you)
Place onto pan
Bake for 20 minutes then flip to the other side
Bake for another 10
Enjoy as is or fridge/refriderage to save!
*I like to harden a piece of sourdough bread I have and then grind it up in a food processor to make into crumbs - I don’t like the store bought ones
Creamy Ginger Turmeric Tahini Dressing
Prepping dressings makes your life a whole lot easier. A good salad dressing also doubles as a dip. It is so delicious - and this one definitely meets that criteria. You can put this on anything to flavor it up: sandwiches, salad, bowls or like I said as a dip for veggies, chips, whatever your heart desires. Eat it by the spoon - I won’t judge.
Ingredients:
2 tbsp tahini
2 tbsp olive oil
½ lemon juice
1 tsp maple syrup or honey
1 tsp turmeric
1/2 clove garlic minced (you can do whole it just adds a lotta flavor)
1 oz ginger juice (or 2 nubs of ginger)
Good amount of black pepper + salt
Recipe:
Put everything into a jar and shake it up!!
Store in fridge :)
I am so hungry now. Signing off to eat some good food. Bye :) & Happy Sunday beautiful people. Remember to enjoy your day, laugh a little and not take everything so seriously.
