The combination of a warm, fudgey brownie and cold creamy ice cream is just perfect.
Alec’s just released their new Mint Fudge Brownie ice cream, which inspired me to make a deconstructed fudgey ice cream sandwich.
Mint chocolate chip is one of my favorite ice cream flavors and this is like the elevated, more decadent version of that. Silky mint ice cream swirled with ribbons of fudge and chunks of brownie. The fresh mint flavor with the chocolate is just perfect. It’s cool, light, creamy and chocolatey.
But before we dive into the deliciousness, I want to tell you why I love Alec’s (outside of their divine flavors) and why I am partnering with them to create this recipe! Since Alecs Mint Fudge Brownie already has swirls of fudge and brownie folded into the ice cream, I wanted to lean into those flavors and create brownies that feel almost like little lava cakes—rich, gooey & chocolatey.
These brownies are gluten-free, flourless, dairy free, refined sugar free and made with simple nourishing and intentional ingredients, just like Alec’s. They come out dense and molten in the center, the perfect base for a big scoop of cold mint ice cream melting right on top. Now let’s get into it…
Fudgey Brownies


Ingredients
1/3 cup unsweetened apple sauce
1/3 cup maple syrup
2 eggs
1 tsp vanilla extract
1/4 cup + 1 tbsp oat flour
3/4 cup raw cacao powder
1/2 tsp salt
1/4 tsp baking soda
1 bar dark chocolate
Flakey salt
Alec’s Mint Fudge Brownie Ice Cream (measure with your heart)
Recipe
Preheat oven to 350 degrees F
In a large bowl, whisk together apple sauce, maple syrup, eggs and vanilla until smooth
Sift in oat flour, cacao powder, salt and baking soda
Stir until combined into a batter
Chop bar of dark chocolate into chunks and fold into the batter
Butter a 6.5 in x 6.5 in square baking dish and pour in the batter
Bake for 18-22 minutes until set on the sides (will be slightly underbaked in the middle)
Top with flakey sea salt
Let sit for at least 40 minutes to set (the less you let it sit, the more lava-cake it will be in the center, the longer you let it sit, the more set and fudgey it will become)
Serve with a heaping scoop of Alecs ice cream, and enjoyyyyy
