Hey hey there. It’s Wednesday and I am sipping on some herbal tea. Just got back from the big apple. I had such an incredible time in New York (quite literally ate my way through), and it made me reflect on myself years ago.

Something that has truly healed me is falling back in love with food. When I first started dealing with my health issues, every doctor told me to cut things out of my diet, and that it was the problem (gluten, dairy, eggs, garlic, onion, tomatoes… I mean the list of things could go a page long).
I cut all of those things out for so long that I built up this notion and fear in my head around food, like FOOD was the problem. It was the food that was making me feel bad. This was such a limiting mindset. By cutting these things out that may have made me feel good but I was told they were “bad”, took away from my gut intuition.
HOW you eat and eating with intention is just as important (if not more) as what you eat.
It sort of took removing myself from the health world and redefining who I am to heal. Sometimes you can get really caught up in what’s good / not good instead of tuning into yourself and what your body needs.
The beauty of holistic health is that joy and love is just as if not more important to your health than food is. And also… food is medicine. Food is medicine when it is cooked with love. Food is medicine when it puts a smile on your face and fills your stomach. Food is medicine when it is grown from the ground and pasture raised with love.
REAL food is medicine. When you connect back with REAL food and ingredients (instead of the fake, chemically altered, unable to pronounce, genetically modified BS), THAT is where the healing happens.
Years ago I wouldn’t have enjoyed all of the same foods that I do today. Years ago I was sicker than I have ever been.
I truly have fallen back in love with food, and through this I have fallen more in love with myself, because I TRUST myself and my gut intuition.
Listen to your body! Tune out the noise. I know it is easier said than done, I mean I’m still working on it to this day, but it truly is life changing.
& if you’re body is telling you to eat these cookies….. Please do. OH MY GOSH. These are inspired by one of the most amazing things I have ever put in my mouth while in New York: a brown butter sourdough apple croissant. Just wow I can taste it right now. I immediately knew I needed to make brown butter apple cookies. So after 3 failed recipe attempts, I finally nailed it.

Makes about 16 cookies
Ingredients
1 + 3/4 AP flour
1 cup sugar
¼ cup brown sugar
1 tsp cornstarch
½ tsp baking soda
14 tbsp butter
1 egg + 1 egg yolk
¼ cup apple butter
1 tsp vanilla
1 tsp vanilla bean paste
½ tsp salt
Preheat oven to 375 Degrees F
Brown butter in a pot or pan and set aside to cool
In one bowl whisk together dry ingredients: flour, sugar, cornstarch, baking soda and salt
In a separate bowl, whisk together eggs then whisk in apple butter, vanilla and vanilla bean paste
Slowly mix in butter
Pour wet ingredients into dry and then fold in the wet until a smooth combined consistency (don’t overmix!)
Roll into parchment paper and place in the fridge for at least 30 minutes (OPTIONAL BUT THEY TURN OUT BETTER)
Roll even balls onto a baking sheet lined with parchment paper
Bake for 12-14 minutes until golden brown on the edges
Remove from oven and let sit for at least 10 minutes
Enjoy heaven!!!!
