Hey hey friends! Happy Sunday :)
It’s my last day in LA before I leave for Europe tomorrow with my Mom! Soso excited to travel with her, and we’ll also be meeting up with my brother because he’s currently living in Spain. Most excited for all of the goood foooood, bevs and immersing in new culture.
Made a nice big feast with some stuff I had leftover in my fridge for breakfast this morning — banana protein pancakes, sunny side eggs & fresh sourdough with avocado, butter & flakey salt.

aaaand currently sipping on my frothy matcha ofc. It has now been over a month since I have had coffee but I feel like that is most definitely going to change this week because coffee in Europe is absolutely necessary.

Banana Protein Pancakes
These are so good. Also made with nourishing ingredients that make you feel good and satisfied. I started making these because I had overripe bananas that I just was not in the mood to make banana bread with so instead started making these and now I have made them three days in a row.
*serves 1-2 depending on how hungry you are lolz*
Ingredients
1 cup oats
1/2 cup cottage cheese
2 eggs
2 tbsp milk
2 tbsp maple syrup
1 tbsp vanilla
1/2 tsp baking powder
1 overripe banana
dash of salt
optional: xxtra banana slices, choco chips & cinnamon
toppings: maple, olive oil & flakey salt
Recipe
blend together all ingredients besides banana
mash banana separately then add into the batter after blending
heat up butter on a pan until slightly browned
mix pancake batter once more
add in pancake batter in circles onto hot butter
when bubbles on the top of pancakes begin to pop, it’s ready to flip
continue until you got your STACK 🥞 feel free to add in any toppings!
top with maple syrup or EVOO & enjoy 😊
Breakfast Sandwich
You can never go wrong smushing a bunch of tasty shiaat into two pieces of toasted sourdough. My favorite addition to my breakfast (or even lunch and dinner) to add in some xxtra protein has been Force of Nature sausages — my fav is the jalapeño cheddar. UGH it is so delicious and flavorful I highly recommend.
Blueberry Ice Cream Smoothie Bowl
It is kind of sort of smoothie szn?? On the one day of the week it isn’t gloomy lol I have been absolutely indulging in my smoothie bowls. This one is a fav.
Ingredients
1/2 cup frozen banana
1 cup frozen wild blueberries
1/3 cup greek yogurt
1 pitted date
1 tbsp almond butter
1 scoop collagen
1/2 cup ice
1-2 tsp vanilla
1/4 cup milk (add by the tsp to blend)
Toppings: bee pollen, cacao nibs, granola
Recipe
Blend everything together
If blender stops, mix with a spoon then blend again, may need to slowly add more milk to reach desired consistency

Salmon Bowls
My most recent meal obsession — just been craving this daily. I sort of mix it up each time but the general idea is the same.
Wild Salmon: I season with olive oil, salt and sometimes pepper. Bake at 425 degrees F in my Wonder Oven for 15-20 minutes or until the skin of the salmon is nice and crispy.
White Rice: The main way I cook this is I add olive oil to a pot (tbsp) then add in my rice and mix. Place a strip of kombu in with it and cover with 2x the amount water. Sometimes once cooked I will mix in rice vinegar.
Sweet Potato: I will either air fry this, steam, or carmalize.
Veggies: Variety: shredded carrot ribbons, bell pepper, cucumber, spring mixed lettuce, cilantro
Avocado: Ideal.
Dressings: ALWAYS coconut aminos. Sometimes sriracha (most of the time) & sometimes carrot ginger dressing*.
Toppings: Sesame seeds + crunchy seaweed.

Steak Nachos
I had no words for this. It was a party explosion in my mouth tastebuds were up in danccingggg. I mean wow. Also — SO easy.
Ingredients
Tortilla Chips: I used 1 bag of Masa chips & 2 Siete burrito sized tortillas made into chips (400 degrees in air fryer for 3-5 mins cut into chipped shape)
2 cups shredded raw cheddar cheese
2 filet mignon grass fed steaks (I prefer cooked to medium rare)
Toppings: Guac, Pico, Sour Cream/Greek Yogurt, Lime
Recipe
Cook steaks to your liking
Line tortilla chips on baking sheet and top with shredded cheese
Broil on high for 3-5 minutes or until cheese is melted
Top with chopped steak
Serve with toppings & enjoyyyyy
