Helllooo my lovely people, happy Sunday. Hope you’ve had a gorgeous weekend. Filled with rest, laughs, sunshine and good food.

I started this morning with a trip to the farmers market, where once again the tomatoes taunted me with their beauty. I wanted them all.

A lot of people ask me how I come up with recipes I make, and the process differs each and every time. One of the ways I love to recipe create is by starting with seasonal produce. Going to the farmers market, checking out what is in season, choosing a seasonal ingredient and then building a dish around that.

Today it centered around corn. I have been thinking about and slightly thought-obsessing over corn for a while now. I knew I wanted to create a corn-centric recipe but couldn’t figure out what. Nothing felt right. I explored a corn-salsa (delish but I’ve done), then a Mexican-inspired bowl, and then I thought I would just stick with the simple corn on the cob with steak. This felt a little better, but not exciting enough.

I had my components for this recipe set - I wanted steak. I wanted crispy potatoes. I wanted charred corn. I wanted chimichurri. So that’s what I did. The puzzle pieces were set, but they hadn’t come together until this recipe.

Ugh. This recipe. Sometimes the puzzle pieces come together so beautifully, deliciously, harmoniously, it is a masterpiece. I’m left speechless. I feel crazy saying this but maybe…just maybe…this may be my favorite recipe I have made so far this year. Idk. I have decision paralysis and also hate choosing favorites. But the fact that I am even thinking that should say a lot.

This recipe is so good. It just tastes amazing, the flavors are balanced so well and it has every bit of texture you could want. Don’t let the fact that it’s a salad scare you. If you are salad averse….forget I ever said it’s a salad. Just trust me. This is for you, this is for everyone. Go bless your taste buds. Have a party in your mouth.
