Happy happy Wednesday! You know those meals that you have out at a restaurant and just dream about, you crave so intensely but it is just not feasible to go out every night to have it?? Currently I am hyper-fixated on the Salmon Coconut Curry bowl from Great White. They have really yummy food but this bowl just hits every time.
I thought I would re-create it at home, and I am v happy I did. So whether you don’t live in Los Angeles, or you just don’t feel like going out to spend a hefty ~$28~ on a bowl, now you can have this comfort meal in the comfort of your own home.
Salmon Coconut Curry Bowl
*Serves 2, or Serves YOU, twice*
Ingredients
2 wild salmon filets
1 cup wild rice
1 + 3/4 cup broth or filtered water (for wild rice)
1 tbsp ghee or olive oil
1 japanese sweet potato
1/3 cup cooked chickpeas
2 cloves garlic
1 finger ginger
