Gooood evening or morning or whenever you are reading this I hope you had the best weekend! I surprised my best friend in San Diego this weekend for her birthday festivities (a successful surprise for once) and we ate lots of good food.
Italian tapas for dinner, and then this morning we went to a bakery in San Diego that grows all their wheat organically and grinds it themselves and makes these amazing sourdough goodies. Any place that grows their own ingredients and makes it from scratch is just an automatic yes from me.
I got the sesame bagel and the croissant — best croissant I have had in California honestly. Perfect flakeyness yet soft doughyness in the inside, light and fluffy. Ugh so good. My friend got the bagel dog which was bombbb basically a spicy sausage wrapped in a bagel bun thingy. & then we got some Conchas and a breakfast sandwich.
Everything was so good! Only open on weekends which is kinda cool except the most later on in the day the more they sell out. Highly recommend going if you are ever in PB area in San Diego.

We did some drinking the night before but none of us were too hungover because I forced my friends to take minerals + a histamine enzyme before drinking and then more minerals and magnesium before bed. IT HELPS. Also olive oil shot before drinking is also always an amazing lil remedy. ~balance~
I heard on a podcast clip the other day, “It takes as much energy to think small as it does to think big.” and this really stuck with me.
I feel like a lot of our brains “auto” mode is to judge ourselves, think negatively or get those feelings of imposter syndrome. Feeling like our dreams may be too big or unachievable. The problem is these thoughts, however harmless they may seem, is if they happen repeatedly, can truly manifest into our reality.
And even though these passing thoughts may seem like they are effortless, those thoughts take as much effort as it would to think positively. To shift that negative into a positive, takes the exact same amount of energy. To believe you cannot accomplish something vs. to believe that you can — are equal in effort.
So why not take that effort to believe? To think positively? My intention for the week is to actively shift my default thought process and believes into ones that are positive and big thinking, and believing in myself. It is easier said than done, but just this realization that it takes as much effort, will help to make those small day to day shifts that make the biggest differences.
Another intention of mine this whole year has been to really listen more to my intuition, and that is actually where this next recipe was created out of. When I go grocery shopping, I go in with an idea of what I want to make for the week so that I am organized and don’t overbuy, but within that I also leave room for intuitively shopping.
Meaning, leaving room for if something catches my eye at the store that feels good for me. And while grocery shopping this week, I walked past this basil that was so fragrant and delicious I was instantly transported into eating pasta in Italy. I needed pesto, ASAP. I needed pasta, I needed tomatoes, I needed garlic. I had no idea what I was making but I knew that I needed these components to make the flavor I began desperately wanting!
So when I got home, voila, chicken pesto pasta with tomatoes was for dinner and it was everything I wanted and needed. So simple, but so nourishing and delicious. I hope you enjoy it as much as me :)
