Blueberry Buckwheat Breakfast Muffins
and a reminder (for myself mostly) to enjoy life
happy wednesday beautiful gorgeous people. I am sipping on my matcha latte & eating a buckwheat muffin — and appreciating it a little extra this morning because I have been on a journey to slow the f down and really savor all of the little things I love and enjoy, which has really been making life feel a bit more joyful and rewarding.
I feel like each year that I get older, I feel younger. I feel like I know less than I did before, but more at the same time. When we are younger we think we are adults and know everything, but the more we grow the more we realize we know nothing and actually…wtf is going on. The older we get, the more things we see. The more we are exposed to. The more responsibilities we have. I think a lot of the things that we are seeing in the world right now feel negative and scary. & The older I get…the less in control I feel. The less in control I feel…the more stressed I become.
When there are so many negative things going on in the world — it’s hard to really slow down and be present. It is easy to feel like we are not in control and start to spiral. But sometimes the most revolutionary things we can do are in our control.
It does not make you ignorant or a bad person to be present, slow down and enjoy your life. Sometimes the biggest act of resistance is just having fun. Showing up and bringing positive energy. Embracing community. Appreciating nature.
It’s easy to get caught up in the negative — to feel like we have to carry the weight of the world on our shoulders — but in reality we were never meant to. There will always be things outside of our control, but what is in our control is how we show up every day — how we think, how we react to things, how we treat others, and how we choose to experience each moment.
We live on a floating rock. We are here for a blip in time. Let’s make our time count. The energy that we bring, the kindness we emit — and the joy and confidence we allow ourselves to feel has a domino effect on the world (in ways we may never even see).
Empathy is a superpower. The world needs more of it — but that doesn’t mean it should completely drain you. It is okay, and quite important, to allow yourself to romanticize the little things, to slow down and savor life. Let’s take extra time to make our matchas, belly laugh with the people we love, compliment strangers and find joy in the simplicity of being. It doesn’t mean living with rose colored glasses — but a reminder that life is also meant to be cherished, lived, felt and truly enjoyed.
Choosing to laugh and have fun and enjoy life is not naive. It does not mean we are ignoring reality. Positive change responds to optimism. Being aware of what is happening in the world and still choosing to bring light and joy to it is a quiet rebellion in itself.
Now let’s make some damn good muffins. Because that also makes life better.
These muffins are flourless, gluten free, no refined sugar — and filled with fiber, protein and anti-oxidants. And they are made with just one bowl, I love less dishes. One Bowl Blueberry Buckwheat Breakfast Muffins….I love when the alliteration works well. The perfect breakfast fuel — and best dipped in your morning coffee or matcha.
